Nah you can totally just eat some and refrigerate the rest for later or the next day.

I should add that I've never cooked less than a block at a time bc its just so damn easy to drain and cut and cook a whole one. Don't skimp on the cornstarch or the salt/pepper. You want a good coating and some seasoning, esp. while acclimating yrself to it.

oh and

@Jaded by crispy I mean it'll be a little bit poofy on the outside (that's the egg/cornstarch) and have some crunch texture when you bite into it, but the inside will still be tofu-y.

Noted.

I ate some tofu thing the other day and the little squares were kinda soft. It was interesting and not bad at all. My idea is to put the stuff I make with the asian medly vegetables steamer thing I have and maybe some rice. Hopefully that works. (your original post said something like that so I don't see why it wouldn't)
