I just can't with chicken any more, (I'll be like this for a couple years and then start this whole process over. )

For firm tofu -- wrap block in a clean dishtowel, set on a plate, set something heavy on top of it to drain.
Come back in 30 minutes. Unwrap tofu, cut into 1" squares. Put into a bowl, season w/ salt and pepper.
In another bowl, scramble one egg, then pour over the tofu, toss to coat.
Add a few tbsp of cornstarch to the tofu, toss to coat. (Flour is an acceptable substitute for cornstarch).
Heat some oil in a pan (med-high heat). When oil is hot, add the tofu and cook until browned and crispy. Remove from heat to a plate w/ paper towel. Serve w/ rice or noodles and veggies. I like to use storebought teriyaki sauce w/ it on days when I'm being lazy.

I pretty much completely stopped eating meat a few months ago, I was really only making it for my boyfriend and I just don't care for it enough to cook it just for myself :shrug: and kiddo has never been big on meat so he doesn't eat it much either

It might take a couple of tries to figure out how much oil you need to "fry" it without deep frying it, but this is a simple way to get restaurant-quality tofu texture.
