To me, apricot preferable. I'd rather my fruit didn't taste like fish.So I was reading a recipe today that was for Mango something or other, but the ingredients list said "Mango or Apricot juice"
I have my doubts that Apricots taste like Mangos, but maybe if you tell people "it's Mango" they will accept it.
Reminds me of the jello experiment we did in school, the teacher offered us different flavors of jello, purple and green,
but the flavors were actually like orange and Cherry. It was a psychology class, the lesson is that your brain believes what it wants to believe.

Depends greatly on your sources, ripeness and varietal of both mango and apricot. That's before any processing, which may happen if you purchase in juice form. Apricot juice would be my substitute, if I were substituting. It's not far off. And, I think with a few pine nuts pureed in, it would be indistinguishable. Mango's flavor profile is pretty much apricot + pine notes. Some(most)mango juices are either really flat in the pine category, or are cut with other juices, which dulls the flavor. So, yeah. In a blind test, I'd say 50% of trained, experienced chefs, would be guessing between apricot and mango purees. Plus, apricot is less used these days.
