Hi food thread. I made a food.

No matter how screwed up the world might be, at least your food will always be consistently fantastic.

Hashimoto's/Hypothyroidism-friendly homemade coconut vanilla coffee ice cream! Tastes like a cappucino!



2 cans 13.5 oz full fat coconut milk
3/4 cup strong brewed drip coffee
1/2 to 3/4 cup monk fruit sweetener (tastes identical to real sugar, but there's nothing about it that's bad for you!)
2 1/2 tsp. pure vanilla extract

Add the coconut milk, coffee and sugar to a pot and heat over medium for five minutes, while whisking. Remove from heat, whisk in the vanilla. Transfer to a bowl and let chill in the fridge completely - at the very least, six hours. Transfer to ice cream maker canister, and add the ice and salt according to instructions. Churn for 40 minutes. Eat at once, or freeze for up to a week. Enjoy!

That looks awesome! A good summer breakfast :wink: Maybe one day I will be able to justify buying an ice cream maker to myself :thinking:

I'm glad it worked and tasted divine! I'm totally going to try it.

Instant pot chicken + butternut squash congee ( Pleco @Pleco)

I use a ratio of 1 scant cup rice + 7 cups water, add whatever bits of frozen chicken I have in the freezer (2 small chicken thighs this time), a few whole cloves of garlic, and I had some extra butternut squash in the fridge, so I threw that in too. Cook on high pressure for 25-30min, add salt to taste, take the chicken out and shred it. While the chicken is out, scramble two eggs and stir those into the rice. Add green onions, put the chicken back in, and you're done. Top with your favorite savory toppings :hungry:

ed: also let the pressure come down naturally if you have time, or it will foam all over the place
