wanted to buy cookie decorating stuff yesterday and all I could find was "bioengineered" crap. And that was the good stuff. Came home and made my own.
I might go all Hanukkah for Christmas - and make latkes and rugelach :).

Saw that this company (UPSIDE Foods) got FDA approval. Something about eating chicken meat grown in a lab just doesn't sound appetizing to me.
Step 1

Sample
In a nutshell, our production process starts by taking a sample of primary cells from a chicken or fertilized egg. From this sample, our team selects ideal cells for developing a commercial cell line. The winning cells are chosen based on their ability to produce high-quality meat and grow predictably and consistently. This process is called immortalization. Once a cell line is established, we're able to draw from it for years - if not decades - to come, reducing the need to take additional cell samples from animals.

seems like a lot of trouble for something that one can raise on one's own. strange things going on in our food supply. Cricket flour? what bothers me is if we were meant to eat bugs, we would have evolved eating bugs, not plants and meat. we have teeth for tearing tough plants and meats. if our systems could work with bugs, we would be eating them. but somewhere along the evolutionary line, i suspect humans figured out that we couldn't eat those creepy things.

I watched an interview with the CEO yesterday. He was adamant that his product is "meat" and not to be confused with "plant based" meat or vegetarian. He said that the product will be sold in the meat aisle and will have a price point less than conventional chicken. The whole thing is fascinating but not for me.

if it's carbon footprint they are concerned about, well, how much does it take from beginning to end to make something like this? what's that thing about making a better screwdriver? it's just another thing to look out for in the waning food chain. going to the farmer if one can find any real farmers left, is probably one's best bet. glad i like among the Amish. they have their faults like all of us, but they know how to farm.
