So frustrating this morning My first hour in the morning is my only uninterrupted time all day to work + maximum patience + awesome office setup and I've made $1.00 - and later when it picks up I'm busy/fragmented/on my clunky laptop

My daughter's school has a potluck tomorrow. Last time I made a cheesecake (I make really lovely ones - pretty and professional looking). I've also made Vietnamese Spring Rolls with Peanut Sauce. I've considered Falafel (but the tahini sauce would make it pricey and all those little balls). I do have a bunch of mini tart pans that I got at the thrift store. So, I considered something like this

but with FAR less of the roses (I mean, does that really taste good?)
With goat cheese? Maybe black olives? But they all want puff pastry (no, no, no. I do not want to make that). Perhaps just a pie crust?? Oh, or feta??

That does look beautiful

You could keep it simple with some mini tarts if you don't want to do all the work or roses! https://www.goodhousekeeping.com/food-recipes/a46642/butternut-squash-and-feta-tartlets-recipe/ you could do a quick pastry like that instead of puff pastry and it would still taste lovely
