Use applesauce. 1/4 c for each egg. Nom nom nom. If it needs a little more to raise it, add about 1/2 tsp of baking powder too.
I have heard of the applesauce substitute, but haven't tried it yet. Does it work? That's the thing. The cake I made was sort of okay, but it seemed flat. I'll save your post here to my vegan folder. Thank you

Sometimes, some recipes depend on the eggs for leavening too, and not just moisture. So you gotta add a bit more BP.
I haven't tried the applesauce substitute either. agree with
@JenniLeigh about the baking powder or baking soda. also I read adding lemon juice helps baked things rise. it interacts with baking soda.
I had a health teacher who made us eat vegan pancakes for class. They weren't good, but it is possible to make them.
